Today, I’m sharing one of my favorite Korean salad dressing.
Growing up, I always had a jar of Yuja-cheong(Yuja Marmalade) in my pantry.
Thanks to my grandma who lives in Namhae, one of the biggest Yuja producing regions in Korea, I love incorporating Yuja into everyday cooking & this is one of them.
*Yuja(or yuzu) is East Asian citron with distinct fragrance and refreshing taste.

It goes so well with bitter vegetables like endives, citrusy and nutty dressing balances out the bitterness😍
So simple, yet so delicious & healthy💛
유자된장 엔다이브 생채 | Yuja Doenjang Endive Saengchae (Endive salad with yuja doenjang dressing)| Serves 1
[Ingredients]
Endives, 2 medium heads(1 ½ cups) (200g, ½ lb.)
Sliced Nashi pear ½ cup
Toasted sesame seeds 1 teaspoon
Pine nuts for garnish ½ tablespoon
[Dressing]
Doenjang(Korean soybean paste) 1 tablespoon
Yuja-cheong(Yuja marmalade) 1 tablespoon
Apple cider vinegar 2 tablespoons
Diced Nashi pear 1/4 cup (30g/1 oz.)
Sesame oil 1 teaspoon

🥬 Substitute endives with romaine lettuce
🍐Substitute Nashi pear with pears or apples
(I recommend Bosc pears & Golden Delicious apples)
